Ingredients:

• 1 cucumber, peeled and diced
• 1 green bell pepper, diced

• 1 tablespoon sugar
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 (28-ounce) can diced tomatoes, undrained

Instructions:

Combine the cucumber, bell pepper, red onion, tomatoes, garlic, vinegar, olive oil, sugar, salt, and black pepper in a large bowl.

Pour the diced tomatoes with their juice into a blender or food processor and blend until smooth.

Pour the tomato puree into the bowl of vegetables and stir until well mixed.

Chill the gazpacho for at least 2 hours before serving.
